Oyster mushrooms?

Thanks to the farmer's market, I have a butt-ton of oyster mushrooms. HOWEVER, I really have no idea what to do with them. I'm used to other mushrooms and know that these would do wonderfully in a stirfry, but I'm looking for more creative, mushroom-centric recipes, particularly ones that play up the flavor of the oyster variety ( Read more... )

They're delicious battered and fried. I also put them in Asian-style soups a lot, like miso. I believe the Millennium also pairs them with lobster mushrooms for a vegan lobster bisque.

Millennium has an almond crusted abalone mushroom dish that is to die for. Oyster mushrooms could easily be used in that dish (I wish I had the recipe to offer!).

I usually prepare oyster mushrooms in a simple sauté: olive oil, toasted sesame oil, cumin, basil, black pepper, paprika, garlic, ginger, soy sauce. They always come out amazingly yummy. Last night my boyfriend and I made oyster mushrooms with green beans, red bell peppers, and broccoli over rice.

They go really well in stews / casseroles. A good hearty stew with tomatoes, bell peppers, mushrooms, oyster mushrooms, onions, garlic, and whatever else you want with flavouring by herbs and some spices.
The oyster mushrooms add a lovely flavour.

last week i sauted onions, oyster shrooms and criminis in olive oil. added white wine, reduced it. added a wee bit of unflavored soymilk, garlic powder, bit of flour, heap of marge to get a creamy white wine reduction sauce. the whole thing was then served over fried polenta rounds - sprinkled with fresh, course chopped basil.

i've been too lazy to post pix.

Fry them gently with finely chopped garlic, in olive oil or nice margarine, add salt and pepper. Eat them on toast, or even with pasta.
