chocolate ganache put to good use

I DID IT! I improvised from a Vegan Planet recipe and made these yummy brownies. The worst part is I'm all about healthy eating so, indulged in ONE and the rest are for all you guys ;) Come and get it! [Mom and Dad each had a big one from the first row.]



They came out nice and gooey. Here's what I used:

Like I mentioned in a previous post - I had more than a cup of ganache left from a previous recipe. Having the choco chips thinned out by a little rice milk made the bownies a little sweeter/ milk chocolatey [?] maybe.

Preheat your over to 350 F. Lightly oil a 8 inch square-ish pan. [Just get out the pan you use for brownies.]

2 Egg replacer [I used 2 TBSP of ground flax mixed with 6 TBSP of water]
Added to that - 3/4 cup organic sugar, 1 tsp vanilla

Stirred in my 1+ cup of chocolate ganache, a TBSP of oil [I used sunflower]

Add 1 cup of unbleached all-purpose flour and 1 tsp baking powder.

To ensure the chocolateyness - I had a leftover handful of choco chips that I mixed in and for some extra 'nutrients', I added a couple handfuls of broken up walnuts.

The original recipe called for a time of 25 minutes, after which, we still had chocolate soup. After an additional 10-15 minutes, they were ready.

Oh - I feel so accomplished!
