This was something I made because I was bored. There was some firm tofu, nuts, and other things lying around...I've never used tofu before in a desert so I tried it...
This is the result...I call it, Vanutofu pie (vanilla custard, nuts and tofu).
So here is the recipe...
The filling.
1 block of crushed silken tofu
3 tablespoons of 'no egg'
3 tablespoons of golden syrup
1 cup of crushed nuts (I used brazilian and walnut
1 tablespoon of custard powder
3 tablespoons of soy milk
1 teaspoon vanilla essence
Combine and stir into a smooth(ish) mix
The crust
(I didn't measure but here are some guesses)
1.5 cups Plain Flour
1/3 cup Vegan soy margerine
1/2 cup Sugar
1 no egg
Use soy milk to complete texture
Roll pastry and line a pie tin
Bake for 20-30 mins = 200 C
(just keep an eye on it, there is not a lot of 'baking' aspects in the ingredients, just don't let it burn, I use intuition)
Crush half a cup of nuts and sprinkle on top of baked pie.
Put back in the oven to roast the nuts
Swirl syrup (I chose mango) over the crushed nuts
Let cool and serve. Enjoy!
