Choc chip cookies
The recipe i used was from vegweb.com and they were called Happy Vegan Chocolate Chip Cookies. Alot of people said the mixture was too crumbly before baking and i kind of found it was too, but i just balled up handfuls of the mixture and pressed them together to hold and baked. And they're very right about them being super duper soft at first. They really will firm up after being taken out.

Apple crumble
3 sheets shortcrust pastry
2 apples, peeled and cut into cubes
3/4 - 1 cup sultanas
1/2 tsp cinnamon
1/2 cup brown sugar
1 1/2 cup flour
1/2 cup sugar
1/2 cup butter
- cut the pastry out to fit the muffin tin and blind bake for about twenty minutes on 180 degrees
- mix together apples, sultanas, cinnamon and brown sugar
- mix flour and sugar, rub in butter
- fill pastry with fruit mixture and top with flour mixture
- bake for thirty to fourty minutes

Apple and Cinnamon Porridge Cookies
1 3/4 cup rolled oats
1/2 cup flour
1 tsp cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/2 cup margarine
1 apple, peeled, cored half grated half cut into small pieces
1 tbsp apple sauce
1 egg replacer
1/2 tsp vanilla
1/2 cup sultanas
- combine oats, flour, cinnamon, baking soda and salt
- cream together brown sugar and margarine until fluffy
- add grated apple half, apple sauce, egg replacer and vanilla
- add the dry ingredients, stir to blend, add the apple pieces and sultanas
- drop dough by heaping tablespoons onto lined baking sheet
- flatten with the back of a wet wooden spoon
- bake at 180 degrees until lightly brown, around fifteen minutes
