Now I'm not vegan, at all, but I love cooking. So when I started dating a vegan (he also won't eat wheat or soy so it's extra complicated for me) I began adjusting my recipes and coming up with new ones. The skins and outside can get a little crispy, I like them soft though so they match the texture of the eggplant.

It's possible. not even that hard once you know what to look for, last night we went out and I had steak tacos and he had a giant burrito.
