Cookie question re: brown vs. regular sugar

Dec 19, 2005 16:35

I'm making a simple sugar cookie recipe and just noticed that it calls for the cookies to be rolled in sugar and cinnamon before they're baked. It specifies granulated sugar, but all I have on hand right now is brown sugar. Will this be a problem?

It's a little difficult to roll things in brown sugar, but other than the logistical problem it should be fine.

Those sound like snickerdoodles rather than sugar cookies. You can probably skip rolling them in cinnamon and sugar and make regular sugar cookies, unless you're really attached to the idea.

Yep. You're right; that's exactly what they are.

you can dry your brown sugar out a bit and pound on it to make little crystals.

(maybe a few minutes at a 200F oven?)

I actually cut it into the cinnamon and then crushed it and mixed it up well and it turned out ok. I had no problems pressing the dough balls into the mixture, even though it was a brand new bag of brown sugar (and therefore fairly moist in that way it is when it's new). If anything, I may have ended up with more cinnamon on them than I would have liked, but that's ok. The spouse will taste test them tonight and I plan to make more tomorrow.
