Bastardized Spanakopita
Webly made it like this:
4 layers of phylo sheets brushed with olive oil. One layer of chopped spinach, pinenuts, garlic and other spices. 4 more layers of phylo sheets brushed with olive oil. one layer shredded tofu with spinach and spices. 6 layers of phylo brushed the same as the others.
Bake at 375F for a long time.
You can pour some veggie broth over it near the end if you want.
If I was to do this again I would make the tofu layer the bottom layer because it was so moist.

Dragonfruit
I always want weird things when I am sick and go to the store. Usually they aren't as expensive as this beautiful fruit though.
It had a similar texture to kiwi with the seed and the sliminess, but the fruit texture was a bit thicker/more full.
Orange Gel.

1. 3 oranges
2. 5 tablespoons of agar agar
3. 1 cup of water
4. 1/4 cup of sugar
5. a hand chopper/blender
6. mint leaves (optional)
How I made it:
1. First I put 5 tablespoons of agar agar flakes into 1 cup of water, and let it sit while I got the oranges ready
2. I cut the oranges in half, or 3/4 from the bottom. Later I ran a parer knife through edges to make it easy for me to take out innards of the orange, and I found myself using a dessert spoon to scoop out the orange bits. When all were clean, I washed them up and turned them upside down to dry a bit
3. I didn’t want to just put chunks of oranges back into the skins. Reached over for my hand chopper and ran it through them on and off. When I strained them I only ended up having about a cup of orange juice; the rest was pulp. Pulp is saved to be eaten independently
Orangelly
4. Started heating up the agar agar and let it dissolve into that one cup of water only. After boiling it took another 5 mins or so to make sure it all dissolved. Then I added 1/4 cup of sugar and a cup of strained orange juice, and mix all together well
5. To make sure my orange halves sit still I put them muffin tins, and just filled them up. Just as I was about to finish filling them up I 6 - 7 mint leaves into the orange + agar agar mix and ran through the chopper again. And that mix went into rest of the orange cups
6. And I had to wait for them to set. Agar agar does not take too much time to set, so in about 2 hours I was about to turn them over and nothing seemed to be moving ;)
Pumpkin Muffins
Recipe From the Post Punk Kitchen.
These are the best muffins I've ever made. I put lots of extra spice in them as well.
Ingredients
1 3/4 cups flour
1 1/4 cups sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon allspice
1/8 teaspoon ground cloves
1 cup pureed pumpkin (fresh or from a can)
1 tablespoon soy yogurt
1/2 cup soymilk
1/2 cup vegetable oil
2 tablespoons molasses
Directions
Preheat oven to 400 F. Grease muffin tins with vegetable shortening or spray on oil.
Sift together dry ingredients (flour through cloves). In a seperate bowl, wisk together wet ingredients (pumpkin through molasses). Pour wet into dry and combine. Fill muffin tins 2/3 of the way. Bake for 27-30 minutes, till a toothpick inserted in the center comes out clean.
Edit: agar-agar can be frozen and thawed and taste fine. Frozen flavored agar reminds me of thoe jello popsicles.
