Miso Soup with Tofu and Baby Spinach

6c water
1 1/2c spinach, cut into thin strips
1/2c thinly sliced white mushrooms
3tbs minced scallions
1tbs tamari
1/3c mellow white miso paste
4oz extra firm silken tofu, drained, cut into 1/4" dice

Place the water in a large pot and bring to a boil over high heat. Add the next 4 ingredients. Reduce the heat to medium until veg are soften. Reduce the heat to low. Place 1/4c of soup mixtur in a small bowl and add the miso, blending well. Stir mixture back into the soup, add the tofu, and simmer for 2 minutes.

Notes: cut the spinach
Taste: "chicken" soup

Thai-Style Coconut Soup

1tbs neutral tasting oil
3 shallots minced
2c thinly sliced mushrooms
3c Veg Stock
1 1/2 tbs fresh ginger
1tbs tamari
1tbs light brown sugar
1sp Asian chili paste
1 14oz can unsweetened coconut milk
6oz extra firm tofu, drained and cut into 1/4 inch dice
Juice and grated zest of 1 lime
2tbs fresh lemon juice

Heat oil, add shallots , and cook until tender. Add the mushrooms. Stir in the stock ginger, tamari, sugar, and chili paste and bring to boil. Reduce heat to low and simmer. Stir in coconut milk, tofu, lime juice, zest and lemon juice and simmer until soup is hot.

Note: brown sugar was substituted with turbinado, several more scoops of chili paste was needed and instead of zesting a lime, put it in the pot for 2-3 mins
Taste: amazing

Cranberry-Walnut Oatmeal Cookie

1 1/4c unbleached all purpose flour
1tsp baking powder
1/4tsp ground cinnamon
pinch of salt
1/2c corn oil
1/4c light brown sugar
Egg replacer for 2 eggs
1/4 soymilk
1tsp pure vanilla extract
1 3/4 rolled oats
1/2c chopped sweetened cranberries
1/2c chopped walnuts

Preheat oven 350d. Lightly oil baking sheet. In a bowl, combine dry ingredients. In another bowl combine wet ingredietns. Mix wet with dry ingredients. Drop by the spoonful. Bake until golden 12 to 15.

Note: sugar - turbinado
Egg replacer- Grind 1tbs flaxseeds to a powder in a blender. Add 3tbs water and blend until the mixture becomes viscous. Best if you add water and oil immediately instead of trying to grind flaxseeds by themselves.
Changes: If using dried cranberries, simmer in water prior to using them so that they won't get hard/burnt during the baking process.
Adjust cooking time based on your oven, 10-11 mins worked for me
Taste: more oatmealy than sweet
