Autumn-themed rice pilaf

Autumn Rice Pilaf
with pomegranate arils & pumpkins seeds

Ingredients

½ cup brown rice
¼ cup wild rice
1¼ - 1½ cup water
1 tsp olive oil
½ tsp salt
¼ tsp pumpkin pie spice
¼ tsp dried sage
½ tsp onion flakes
½ cup roasted pumpkin seeds
½ cup pomegranate arils

Directions:

(The cooking time is for a pressure cooker; otherwise, just cook as you normally would brown rice.)
In a pressure cooker, bring the water to a boil. Add the rice (both), oil, salt, and seasonings; stir. Bring to pressure and cook for 25 minutes. Allow pressure to decrease naturally for 10 minutes then release remaining pressure. If the rice is still fairly moist, cook it for a few minutes on a low burner without the lid on the pan, stirring frequently, until it's more fluffy. Just before serving, mix in pomegranate arils and pumpkin seeds.

This recipe is for two large servings. If you plan on having leftovers, keep the rice, seeds, and arils separately so that the seeds and arils don't get soggy. Mix them in after you re-heat the rice.
