1. I'm sure that would be fine. I used unsweetened because I didn't want them to have any sugar in them, and they were plenty sweet because of the maple syrup and the pears.
2. Yea. You can buy flaxmeal too, but I just grind up my own.

I actually just measured out 1/2 cup of the seeds and then ground them up and used that. Worked fine for me.
