Crowd-Pleasing Strawberry, Goat Cheese, and Almond Dessert Pizza

Perfect summer dessert for serving a large group. Easy easy prep, serves large groups easily and inexpensively, delicious way to use up those strawberries that are sitting in your fridge going bad. Great for casual outdoor dinner parties. A dessert pizza is a modern and fresh crowd pleaser. Also looks BEAUTIFUL!

Serves at least 6

Ingredients:
1 large premade pizza crust, the thinner the better (tried to made my own once...miserable fail)
1 lb fresh strawberries, sliced
1/4 cup orange juice
1/8 cup rum (optional)
1 tbsp sugar
8 ounces goat cheese
4 tbsp honey
Ground black pepper
Fresh mint leaves
1/8 cup sliced almonds
2 tbsp olive oil
1 tbsp balsamic vinegar

How to make:
1. In a separate bowl, toss the strawberries in the orange juice, rum (if you're using it) and sugar. Set aside.
2. In a small bowl, mash the goat cheese (which should be at room temperature) and the honey. This forms the "sauce". Add more honey if you find it too thick. The consistency shouldn't be runny...it should be at the consistency of warm cake frosting.
3. With a rubber spatula, spread the sauce on the pizza. I spread it all the way to the edge...I prefer not to have a "crust".
4. Let the strawberries sit for a few more minutes before draining them in a colander and spreading them on the pizza.
5. Sprinkle with mint, vinegar, almonds, and a modest amount of pepper.
6. Preheat the oven to 450. If you've got a pizza stone, use that. I highly recommend investing in a pizza stone and a pizza paddle...the stone really does make a huge difference. If you don't have one, place the pizza directly on the oven rack and bake until the cheese begins to brown.

That's it! Kid friendly, easy to make, quick, cheap, and fun. My go-to dinner party dessert.
