I'm co-hosting a gathering of roughly 20-30 people. I'm in search of an easy to serve and eat vegetarian (vegan better) dish that I can serve in the crock pot. I had planned to do stuffed mushrooms (not crock pot dish) but realized that the dish needs to be warm and the crock is really my only option ( Read more... )

You're going to need a few crockpots :-) Also: toothpicks.

If veggie meatballs are available at grocery stores near you, they're great done in a slow cooker with barbecue sauce. Alternatively, these http://www.presidentschoice.ca/LCLOnline/products.jsp?type=details&catIds=159&productId=19430 (similar products are available in the US if that's where you are) are a good chicken sub so you could cut them in chunks for easy spearing with a toothpick and use any crockpot chicken breast recipe.

A recipe for crockpot stuffed mushrooms: http://crockpot365.blogspot.com/2008/04/crockpot-stuffed-portabella-mushrooms.html. It should work similarly if you use regular mushrooms only more of them. If you want it to be vegan, use some nutritional yeast or vegan parmesan instead of the parmesan.

Not crockpot related, but 7 layer dips are good vegetarian stand-up food that can be served cold. (e.g. refried beans, salsa, green onions, lettuce, chopped tomatoes, sour cream, and grated cheese)

I'm already doing hummus and veggies so don't want another dip, though I do love 7-layer dips.
