So, fitter okayed the saddle, woohoo! He actually ended up using his vice to make the extra-wide gullet thingy wider. Also, the man worked in pretty challenging conditions-- it was pouring, and so we had only the really limited space of the tack area since we do not have a barn with fancy crossties and such.
