A double boiler substitute is as easy as boiling some water in a saucepan while a smaller metal bowl rests on top. Just make sure the boiling water doesn't touch the bottom of the other bowl.

I was going to stick a glass bowl on top a saucepan of boiling water, but my mom said that there needed to be like a seal or something? That it was the vapor that cooked the stuff on top and that if it was escaping through the sides then it was useless. Do you know if that's true?
