Saturday work was fairly better. I went in from 6 to close again, which is fine with me, and I'll be doing the same this coming week. Last time, I helped prep, but then just stood to the side and watched. I know you did really well in your pastry class, and it sounds like the pastry/dessert element of the restaurant is more your style than the main food line. Any thoughts of more seriously pursuing a future as a pastry chef?

Yeah, I'm not sure. I was kinda thinking the same thing, at least as just another possibility. From what I've heard, it sounds like you don't necessarily need a pastry certificate to be a pastry chef, just some familiarity to start.

Today in Classical Cuisine, actually, my group was in charge of breads and desserts; Jason and I made about 10 loaves of 5 different types of bread, he worked on petit fours, and John and Molly made a type of French chocolate mousse cake. It all came out great, and I was really excited to do it all and wow the class, since we went far beyond only the requisite one loaf of bread. So I guess it's something I'll always just keep in mind, as another outlet.

Nice. I think I saw the commercial for that, but missed the show. What they do with cakes -- and also those chocolate and sugar displays -- are effing amazing!

which choc. and sugar displays?

basically it starts by announcing the theme (it was celebration cakes) and making teams of 2 then they have 30 min. to plan a cake and then 8 hours straight to create it (there's a live audience)
they round robin for the first 6 hours unable to speak to one another and work together in the final hour

the contest seemed to have no practical application but it was still interesting to see the cakes anyway
