i need a good festive flourless dessert!

by which i mean, i've been invited to my sister's friend's house for new year's, and it's potluck, and the hostess has celiac disease, which means i need a festive gluten-free dessert. i made flourless chocolate cookies for passover, but i don't know if i liked them enough to make them again. they were very sticky. so does anyone have a good ( Read more... )

I use this recipe for cookie pie when I need to bring a dessert to break-the-fast (there is a vegan as well as a gluten free eater there which makes most things difficult.) It's not terribly fancy though. (This is my son's favorite dessert though)

There is also the old simple peanut butter cookie- 1C PB (chunky or creamy), 1C brown sugar, 1/2 tsp vanilla, 1 egg and either 1 C mini chocolate chips or hershey kisses. Preheat oven 350. Mix first 4 ingredients. Blend in chips if using. With moistened hands form 1 tbsp of dough into a ball. Arrange on 2 baking sheets 2" apart (I use parchment paper to avoid sticking). If not using chips press a kiss in each cookie. Bake 12(ish) minutes. Cool 5 min on sheet.

i completely forgot about peanutbutter cookies! i even have everything already. the cookie pie might be a problem, tho, as i don't own a blender.

What about a fool..slightly sweetened and smashed berries swirled with whipped cream.  Yummy and easy.  I dont have a recipe because it's just suger, fruit, and whipped cream.  You can add vanila too if you want.     m     :)

You could make a Crumble - cooked berries or fruit, with a topping that is made from oatmeal (which I don't think has gluten in it), brown sugar, and butter all crumbled together. Some folks call it a Brown Betty. You can go to AllRecipes or FoodNetwork.com to find specifics.

i think some oatmeal does have gluten, because i've seen mentions of gluten-free oatmeal around the web. a crumble is a nice idea, tho. i mean, gluten-free oatmeal is still oatmeal, and whatever i have left i can eat myself. :D

It's a cross-contamination thing. Oats don't naturally have gluten, but if you don't buy the certified gluten-free, there might be cross-contamination. Also about 15% of celiacs react to oats, even the gluten-free kind. That said, in any oatmeal cookie type recipe, it's fairly easy to replace the flour with ground oats (if you have a food processor and can grind them that is), though you have to increase the amount slightly because they absorb less moisture--about 15 -20% usually (if you know what the texture of your cookie dough is supposed to be when made with flour, you can just keep adding by the spoonful until you have the right texture).

I love these cookies. I'm not sure they're festive, but they are delicious.

Chocolate Peanut-Butter No Bake Cookies

Ingredients
• 2 cups sugar
• 4 tablespoons cocoa
• 1 stick butter
• 1/2 cup milk
• 1/2 cup peanut butter (or whole cup, recipes vary)
• 1 tablespoon vanilla
• 3 cups oatmeal (quick oats work better than rolled oats; of course, make sure the oatmeal itself is explicitly gluten-free)
• Waxed paper
Directions
In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk.
Let boil for 1 minute then add peanut butter, vanilla and oatmeal.
On a sheet of waxed paper, drop mixture by the teaspoonfuls, cool until hardened.

homg. two of my favorite things - chocolate and peanutbutter - in one cookie. also, easy. i don't think gluten-free oatmeal should be that hard to find, but since i've never tried to look for it i don't know. but still, yum.

It's totally easy to find; I mentioned it because one might assume oatmeal just is gluten-free, but a lot of it is processed in facilities that also process wheat.

It's a ridiculously easy recipe.
