Since I actually never bother to write down recipes that I've used and liked, I have decided that my livejournal will be the location for my recipes. I could get a tumblr, but really, I already have far too many distractions in my life.
So "Recipe of the Week" was born! I'm going to try to remember to post my favorite recipe of the week on this blog. So we will begin with last week.
Balsamic Chicken BBQ Pizza
Intro: This is a play off of a recipe I saw on Food Network, only I decided to make it into a pizza. This is because I am a college student, and everything is better on pizza.
Ingredients:
- Pizza dough (I prefer whole wheat, but whatever floats your boat)
- 1 red onion, sliced
- mozzarella cheese, shredded
- 1 lbs. boneless skinless chicken breast, chopped into bite size pieces
Balsamic BBQ Sauce:
- 1 cup balsamic vinegar
- 3/4 cup ketchup
- 1/3 cup brown sugar
- 1 minced garlic clove
- 1 tablespoon Worcestershire sauce
- 1 tablespoon mustard
- salt and pepper to taste
Directions:
1. Follow the directions for pre-heating your over for your pizza dough
2. For the BBQ sauce, combine all ingredients together in a sauce pan and make sure the mixture is smooth. Simmer at medium heat for 20 min. (Be careful here since I've had it boil over because it was too hot)
*Add 1 tsp cornstarch if it's not thickening
3. Roll out the pizza dough
4. Make sure your pizza pan has enough butter/oil/Pam spray so that the dough doesn't stick.
5. Sear the chicken pieces in a pan at a really high heat. You don't want to cook them through all the way because then it becomes really dry and tough.
6. Now that you have your sauce, cheese, dough, and toppings, assemble your pizza!!
* Save the extra sauce for chicken later in the week or even steak.
7. Bake off your pizza, following the directions for your dough.
Voila! You are now a master chef!!
