In true Midwestern fashion, my mum was the queen of casseroles. (Our potlucks were killer.) One of my childhood favorites was this massive chicken-cheese-rice-veggie conglomeration of her own creation full of "secret" ingredients that took two hours to bake and would make our entire house smell like chicken broth and Velveeta by the time it was finished.
Going away to college meant no more of those horrendous food experiments of hers, but during a heatless night in the middle of a blizzard last winter, I realized how I missed warm comfort food that really stuck to my bones. But without an oven (and patience, and an army to feed), I had to figure out a way to mimic the deliciousness with only a microwave and my meager cooking skills (which usually results in everything coming out burnt).
But! Success! And so stupidly simple, too! Takes five minutes, max. In fact, I haven't even told my mum how easy it was to mimic the recipe in fear of her accusing me of deep-dish blasphemy.
Chicken-Cheese-Rice Casserole (For One, Maybe Two)
1 bag instant, microwavable white rice
1 can chicken
1 serving frozen peas, or whatever vegetable(s) you prefer (those single-serve things of veggies work really well)
two heaping spoonfuls of Cheez Whiz, or more
pinch of garlic powder, salt, pepper
Microwave rice and veggies. Retrieve bowl. Dump. Stir. Nom.
