Hi guys! New here. Thanks spotlight for making me aware of this community, I feel right at home! :P

Cheesy Fried Burritos using Hamburger Helper:

Cooking Oil
1 lb ground beef
The seasoning package from a box of Cheesy Enchilada Hamburger Helper
half a diced tomato (or diced tomato from a can)
1/2 cup instant rice
Approximately a crapload of shredded chedder cheese
Large tortillas
Sour cream
Tabasco



Brown your ground beef, drain, stir in the HH enchilada sauce and the diced tomatoes. While browning your meat, you should have cooked the white rice. Add that to the mixture as well and combine everything.(This works just as well without the rice and my husband actually prefers it that way, if that interest you.)

Scoop combined mixture (generously) into the center of a tortilla shell and add a VERY LIBERAL amount of the shredded chedder on top. Roll up as tightly as you can into burrito form.

In a frying pan, warm a layer of cooking oil ( you don't want so much so that the burrito is submerged, only about 1/2 of it, so it won't fall apart.) Cook until that side is golden and then turn and do the same on the other. Remove from the oil and slather it with lots of sour cream and top with as much Tabasco as you like. (or any hot sauce. I'm a tabasco addict and put it on everything but you don't have to. :P. )

Eat. Hate yourself. Love life.

(BTW--You can use the noodles provided in the box for something else. I usually just cook them and add a bit of terriyaki or sweet chili sauce and parm. cheese mixed in. yum yum.)

For a Vegetarian Black Bean Fried Burrito:

I recommend using Morningstar Spicy Black Bean Veggie Burgers in place of the ground beef. Adding green/red/orange/yellow peppers is yum. Proceed as usual w/ the frying.

Perogies

FRY THEM. Yes, I am telling you. it is amazing and brings new meaning to your life. Take whatever frozen perogies you like (I prefer cheesy potato) and drop them into a pot of hot oil. Fry until crispy and golden, remove, top with lots of sour cream and (again) hot sauce. They are INCREDIBLE.

-A really trashy sandwich I can't get enough of is crunchy pepperoni with mayo and cheese. I just use the little pepperoni slices that come in a bag for pizza topping. I like to use Havarti but since that is pricey I have definitely used American; also delicious! You get the pepperoni crunchy by placing them on a paper towel on a plate and microwaving them for a few minutes until they are super, super crispy. Put them on your mayo'd bread w/ cheese and press down. Viola!

-There was a time in my early twenties I basically lived off of potatoes, Ramen, and spaghetti noodles w/can tomato sauce. Condiments are key. Parmesan is pricey but it lasts a long time and makes everything better. Ranch Dressing is a God-send since I have ALWAYS seemed to have it in my fridge in a jam, and it replaces sour cream, especially on baked potatoes, amazingly well (even better actually--I prefer it, now!) It is also good on just about everything in the world. If you ever find yourself with bagels and no cream cheese, try spreading a thin layer of ranch dressing on top and then drizzling Italian dressing over that. If you have bacon bits to sprinkle on this, even better!

-Whenever I make Mac and cheese (kraft, box, nothing fancy) I always add a can of diced tomato w/ jalapeño and some (just a bit) chili powder. It is maybe one of my favourite trashy 'meals' ever.

-Oh geez, I could go all day with Ramen. My favourite trashy mix though, is to add a bit of ranch dressing, a ton of parm cheese and french cut green beans from a can to chicken vegetable ramen noodles. So good!

-And finally, less trashy but definitely makeshift, I figured this easy recipe out once when I had all the bare makings for spaghetti but no meat or 'real sauce' and no money to procure myself some. What I DID have was a bag of frozen shrimp and diced tomatoes in a can.

Basically, make your noodles, heat up the diced tomatoes without draining (I add a bit of brown sugar to any 'pasta' base. Am I the only one who does this?) and add the frozen shrimp to the sauce. let it cook a few mins 'till the shrimp thaws. Combine the diced tomato/shrimp sauce to your cooked noodles and them add a ton of parmasean and crushed red pepper flakes to it until it is super cheesy and amazing. The shrimp is just divine in this sauce and adds such a nice flavor to everything else. (Be careful with the crushed red pepper flakes btw, as I have definitely went overboard myself - only as hot as you can stand it.) Just a note: I find this is especially good with Rotini. If you don't have/like that, it is also good with Rigatoni or Penne. It's also good with just regular sting pastas but for some reason it is so much better with these. Also, if you have any beef bouillon, add a bit into the diced tomato sauce. Even better.

Annnnd ... That's really all I can think of, right now, but I am sure I'll be back to share more at some point. I love trashy eats, and I hope you enjoy some of these!

poor college trash, ramen, vegetables... probably canned, sammiches, mac and cheese mix-ins, condiments, artery-clogging goodness, fried, hot sauce, cheese... and lots of it, bacon, potatos
