Roasted Rosemary-Onion Potatoes

Three recipes down, and 22 to go to meet my New Year's Resolution of trying 25 new recipes this year!

Tried cornbread-stuffed pork chops last night, which were so-so. The recipe, typical, called for too much salt. I really should just not include any salt in recipes whatsoever. I never care for it. I don't use salt in my own dishes. Anyway, nice ( Read more... )

I just used a spatula and flipped them around and shook the pan with an ovenmit, too.

They were so yummy, Ms. Hatter! If you try them, please tell me what you thought of them. I thought they were delish!

Instead of shortening, try it with olive oil on the pan. That's how I make my oven roasted potatoes ( ... )

Expect an email from me shortly with recipe request, then, thank you! I don't have much of a sweet tooth, and neither does my husband, so we don't bake too much. I'm looking at dinner items more than dessert.

I did the same thing with greasing with olive oil rather than shortening - it's in there somewhere as a parenthetical note.

The pork itself was tasty! Not from a farm stand, but from Whole Foods. Nice and fatty. The texture was fine -- just man, too much salt in the recipe! Next time, I will make my own stuffing with some of their recommended ingredients (minced bell pepper and fresh bacon crumbs) rather than the cornbread stuff out of the box which the recipe called for. When I try a new recipe, I like to follow it as closely as I can before I get experimental.
