Tried cornbread-stuffed pork chops last night, which were so-so. The recipe, typical, called for too much salt. I really should just not include any salt in recipes whatsoever. I never care for it. I don't use salt in my own dishes. Anyway, nice

Also, for pork chops... they are breeding pork nowadays so as to remove all the lovely fat. Now that may be good for some meats, but for Pork it spells disaster (as Emeril loves to say "MORE PORK FAT!") therefore they don't TASTE the same way as they did when we were kids. Recommendation: A... use fresh bread crumbs to stuff the pork chops with and plenty of chicken broth to wet it down with. B... Keep an eye on those pork chops, cover them in the oven then brown the tops at the last minute... C. Find a farmer's market that sells fresh hand raised pork. I know you will be able to find it somewhere. Berkshire pork is one of the best. Why do I know so much about pigs? We have them at the farm (:

I did the same thing with greasing with olive oil rather than shortening - it's in there somewhere as a parenthetical note.
The pork itself was tasty! Not from a farm stand, but from Whole Foods. Nice and fatty. The texture was fine -- just man, too much salt in the recipe! Next time, I will make my own stuffing with some of their recommended ingredients (minced bell pepper and fresh bacon crumbs) rather than the cornbread stuff out of the box which the recipe called for. When I try a new recipe, I like to follow it as closely as I can before I get experimental.
