Just started my first attempt at a citrus pork loin in the slow cooker. I floured and seasoned (salt, pepper, basil, onion powder) the meat, then browned it in coconut oil. In the slow cooker with it is juice of 2 lemons, 1 tangelo, and 1 navel orange. The rinds are all in there with it except for one lemon that had a nasty looking rind. I also threw in some baby carrots and some onions. I then seasoned it some more with more salt & pepper, sage & garlic powder. Add in some chicken stock and voila, dinner is cooking.
It will then be served on a bed of rice made with coconut milk.
Should be festive. :)
