whee and stuff

I keep thinking about this chicken I roasted last week and how I could've made it better.

I accomplished my main goal of having a tender, juicy chicken with deliciously crispy skin. However, I cheated to achieve this; I used about 3/4 stick of butter. Sooooooooo greasy. And I put a crap-ton of lemon juice on it so it was very tart. Not doing the greasy part again; I have to learn how to actually cook it properly.

But, I loved making it. I loved using what I had around the house to make this thing pop with flavor. It wasn't perfect but I see myself becoming a better cook as time goes on.

This, naturally, makes me really happy.

I knew I had to start somewhere with my cooking, so as I stated above, I've been "cheating". Made the best potato soup of my entire friggin' life with tri-colored new potatoes. My secret? A quart of heavy whipping cream. Everything goes better with cream and butter. I think a truly talented cook can achieve this kind of richness of flavor without using so much of either. I'm getting my footing with cooking times, what things look like at an appropriate doneness, how flavors combine, so hopefully this will mean less butter and cream. Mmmmm fatty dairy....

I'm glad to see this trend - a love for cooking - coming out within.

I'm also learning how to keep a well stocked fridge and making my food last. For instance, I haven't been grocery shopping in two weeks yet I still have enough meals and snacks to last until the end of the week. :-D

Man now I'm hungry. Gonna go to Boston Market and get my mashed potatoes on.
