Nutty coating for chicken

2 tbs almonds
1 tbs pistachios
2 shallots
4 cloves of garlic
piece of ginger the size of half my thumb
1/2 tsp: of turmeric, coriander, smoked paprika, salt, amchoor
1/2 tbs maple syrup

Blitz with enough milk or yoghurt to moisten it into a paste. Enough for one big jointed butterflied skinned chicken. Marinade. Slap on grill. Serve cut into strips in chapati, with griddled quartered courgettes and roast red pepper relish.
