How to make ice cream without an ice cream maker

Feb 19, 2008 09:15

Take a cup to a cup-and-a-half of frozen berries (raspberries, blackberries and blueberries will work), put them on a flat tray, sprinkle with one to two tbsp of confectioners sugar and crush them with a fork. Every single one. You don't have to turn them into mush, just squash them so they fall into the individual little round balls (or look squashed in the case of blueberries). If you want to use strawberries, they can't be crushed, you'd have to chop them, which can be scary. Work fairly quickly, because you don't want the fruit to warm up too much.
Mix this with 250ml of double or whipping cream you have whipped to soft peaks. The fruit will partially freeze the whipped cream and turn into this luxurious silky mass (I actually like semi-melted ice cream a lot).

Et voilà, instant ice cream.
