I'm happy to report that tonight's version of Mexican Rice turned out fabulous. Vince was quite happy with the addition of the black beans, I'll admit I was holding my breath a little on that one.

So for my records, here's the recipe.

2 cups rice
4+ cups of water (I just put a little extra in, didn't measure it but it was probably under 1/3 cup)
1/2 cup taco seasoning -- give or take
1 can black beans, drained
2 cups ground beef, precooked (or brown 1 lb of ground meat)
1 cup or so of shredded cheese

put everything but the cheese into a pan, bring to boil. Turn down heat and cover. Cook 20 minutes stirring as required by level of stress that the dish won't turn out right.

Stir in an amount of cheese that looks good, cover and let sit 5 minutes while any remaining water is absorbed.

Serve. Garnish with more cheese if you like. I like sour cream on mine. A few olives would be good and one day I'll try a little guacamole because I'm weird that way.
