Reposting a recipe

babycatcher33 is busy nesting and one of the cool things she does is make a bunch of meals in advance to have in the freezer. How I wish I had known to do that. Anyway, she just showed a picture of a meal she had made and I had to have the recipe. Imagine my delight when it turned out to be a crock pot recipe full of things we normally would have on hand, except the ham which is easy enough to grab on a good deal.

Anyway, I wanted to share the recipe -- hope that's ok Janice!

Cheesy Ham and Potato Casserole

5 med potatoes, peeled and cubed
1 1/2 cups cooked cubed ham (I use 2 cups usually)
1 can niblet corn, drained (I toss in 1/4 - 1/2 cup frozen)
1/4 cup frozen green peas
(I added some diced raw carrot this time)
2 tsp dried onion (or some chopped fresh onion)
1 can Campbell's cheddar cheese soup
1/2 cup milk
3 Tblsp flour
salt and pepper

I put the potatoes, veggies, ham, and onions in a big bowl, then I mix the soup, milk and flour in a separate bowl or big measuring cup. Pour the cheese sauce over the potato mixture, toss to mix well dump into slow cooker and cook on low for about 8 hours, stir a couple times. The cheese sauce will thicken as it stands when you take it out of the slow cooker.

When it was cooked I just dumped it into a foil freezer container, let it cool and put it in the freezer. It can be warmed up again in the microwave or in the oven.

I love anything I can toss into the crock pot without too much fuss. I have grand plans of one day having a freezer to store meals that are either already cooked or ready to cook.
