Gluten Free Cupcakes

Has anyone here had success using Bob's Red Barn all-purpose gluten free flour for making cupcakes (like the ones from VCTOTW)? I read you're not supposed to use anything that says it's for making bread, and I know that's one of the things it says you can make with it. It says cake as well, so I dunno ( Read more... )

i just picked up some of this stuff a few weeks ago and i was so surprised. i have had excellent results so far. i have made cookies, brownies, pancakes, and biscuits with this mix and all turned out amazing. the brownies were the best...waaaay better than the same recipe with regular flour.

the only issue i have had is that before baking the batter has a weird odor and taste....do not eat any of the batter....it does not taste good. but rest assured...after baking everything tastes as it should.

i haven't but i use a mix of soy and tapioca flour to replace white flour. seems to work fine for recipes from VCTOTW
