Vegan scone recipes, anyone?

So, I just spent a few days at my uncle's condo in New Jersey. He just so happens to live right next to a Whole Foods (how convenient!) I quickly became addicted to their Vegan Chocolate Chip Scones. Oh my lord, I had one every day for breakfast. So good. Anyways, I got back home yesterday.. and this morning I woke up and realized no more ( Read more... )

Man, a friend of mine recently posted that he made vegan scones but has yet to give me the recipe. I'll keep you in the loop though :D

Oh poo you figured it out already! And it turns out he doesn't have a chocolate chip scone recipe, he has an orange currant one. But I'll give it to you anyway, just in case ( ... )

I really liked the blueberry scones (I made strawberry) from Vegan Lunchbox, but I know there is a chocolate chip variation in VWAV. However, I'm at work and don't have my books here. Sorry!

SCONE RECIPE from Vegan With a Vegenance:
3 c flour
2 TBL baking powder
1/4 c sugar (plus tsp. for sprinkling tops)
1/4 tsp salt
1/3 c vegetable oil
1/2 cup soy cream (soy milk is fine)
3/4 soy milk plus 2 teaspoons apple cider vinegar

-preheat oven to 400
-in large bowl mix dry ingredients
-add in wet ingredients
-mix until dough is lumpy and not sticky (if sticky add a little more flour)
-bake 12-15 minutes

CHOCOLATE CHIP VARIATION:
-add 1 tsp vanilla, 2 tbl sugar, and fold in 1 C chocolate chips!

I actually havn't made this, let me know how it works out!
