Modified from the "Scrumptious Banana-Nut Bread" recipe in Sarah Kramer's La Dolce Vegan.
3 medium, very ripe bananas (upped from 1 large -- ONE BANANA does not a banana bread make, in my opinion)
6 Tbsp soymilk (this is 1/2 cup plus a bit)
2/3 c sugar
1/2 c silken or soft tofu
1/3 c canola oil
1 tsp vanilla
1 3/4 c flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
2-3 Tbsp flax meal (added to help prevent banana pudding from happening, and to make me feel like I was being healthy)
generous dash cinnamon
generous dash nutmeg
LOTS AND LOTS of chopped walnuts (I used about 3 double handfuls because my roommates are CRAZY for walnuts. Personally I prefer chocolate chips!)
Preheat oven to 350. Spray loaf pan with non-stick baking spray and set aside. Break bananas into pieces and throw into blender with soymilk, sugar, tofu, oil, and vanilla. Blend until smooth. Sift flour, baking powder, baking soda, salt, flax meal, cinnamon, and nutmeg into medium bowl. Stir in banana mixture until all dry ingredients are moistened. Fold in walnuts. Pour into loaf pan and bake 45-50 minutes or until toothpick/knife/chopstick comes out clean. Cool in pan on rack 10-15 min before removing from pan. Enjoy!
