Friday we took the dog to the park with Mandie and then made some dinner. I made a tasty coconut cornbread that i was very happy with. I include a recipe at the end. Then more folks came over and we played some board games. Also, i filtered the bacon vodka again and even tasted a finger print of it. It is quite bacon-y and quite harsh...
Saturday, we walked with Atari from our house to his and then had some lunch. Mmmm, free exercise... Afterward, k's foot was hurting pretty bad so we didn't do too much for the rest of the day.
Sunday, we went to brunch with some people from AOSC at a tasty southern-ish brunch place. We also went to Ikea for some storage bins and two different REI. They were having their super sale, so we got kind of a lot of stuff. I got a new windbreaker for biking that is serving very well. In all, we saved like $200 off of the rather comically high regular prices.
Also, tonight i cooked a chicken in my smoker with some of that free cherry wood i acquire a while ago. It came out great. I need to smoke more things... Also, also, we made a chicken stock out of the bones of the chicken and the nasty bits. I'm interested to see if any smokey flavor will pass into the stock...
Coconut Cornbread
- 2/3 cup white corn meal mix
- 1/3 cup sugar
- 1/2 cup light coconut milk
- 1 egg
- 2/3 tb oil
- a bit of dried coconut
Put a 6 inch cast iron skillet in 400 degree oven. Mix everything in a bowl until just combined. Pour into hot skillet. Sprinkle dried coconut over top. Bake until done, about 25 minutes.
