I racked the cider again last night. I also added some fining agents (kieselsol and chitosan) to try to clear it up. We tasted it as well. It was very tart and had a slightly odd taste that i can't quite place... I know i've tasted it before, i think it might just be a general dry wine flavor. So here's to hoping it turns out OK. I am also happy to report that it didn't kill us.
