A lot of people are surprised by how much Ianto's death has hurt. I'm certainly one of them. And like you, I knew it was coming. I was spoilered for months! It's ridiculous, but even though Ianto wasn't real, the grief most certainly is. I don't get attached to fictional characters like this ever so it's a completely new and unpleasant experience. Lack of sleep, lack of apetite, abject misery in the moments I can't take my mind off it. In that way the writers and Gareth (particularly Gareth) have done an amazing thing, creating a character that people fell in love with so much. Quite an achievement.
I think it's the whole point of good telly but I too feel like I'm grieving a real person. My parents don't get it. I keep bursting into conversation about him and they're like 'Rae, it's a tv character. Gareth is wandering the streets as we speak.' But he's not a character, not Ianto, he's a representative of anyone who's ever been in love and everyone who fights for that love.

Yeah. He's fictional, it's almost three weeks, and sometimes I'm still crying. There is it. My fandom is my life. Oh dear God.
