The other week, inspired by the flyer in our mail box and
ptechnix's post which I'd drooled over, I decided to make puff pastry pizzas.
There was some puff pastry in the freezer with no set appointment and some bits of food here and there, so why give money to Domino's when I could make it myself! Having said that though, I still want to try theirs again.
I was a bit lazy with my first attempt, as you can see! The sauce is actually some capsicum tapenade I had, which really added to the flavour. I then added ham and a variety of cheeses: tasty, parmesan, blue cheese and caraway gouda.
I did notice that the sauce shouldn't be too wet and applied sparingly or it can go a bit soggy. One method I read online for puff pizzas though, said to bake the pastry for a few mins first so there's less chance of sogginess. I might try that next time. All up, it made a nice, easy and quick comfort food meal!

These ones had onion and an eggplant dip sauce. The eggplant was
a little too wet so the pastry became a little soggy, but still rather tasty.
