Susan and Kris, understanding my deep love of cake, got me a fabulous cake 2009 calendar. Not only does it have great PICTURES of cake, but there are RECIPES too! YEA!
Until this week I was just looking at the yummy picture of "The Best-Ever Chocolate Cake" thinking "wow, that looks fantastic". This week I decided I'd actually MAKE the cake-of-the-month. I mean, I HAVE the recipes, I love cake, why NOT???
February: Best-Ever Chocolate Cake
Cake: Very tasty. Moist and light and crummy, with a very good chocolate flavor. The picture shows a three layer cake but I ended up making it into cupcakes. I wasn't quite up for a three layer cake today. If I make this for a dinner or party, I'll make it that way.
Frosting: Way too sweet. While reading the recipe I thought "yummmmmmyyyy". I mean, how bad could butter, chocolate chips, sour cream and powdered sugar be? It was ok - light and fluffy - but way too sweet. I wonder if I added less sugar if that would help? I'll have to experiment and find a better frosting.
In making the cupcakes I used two different pans: a regular metal pan and my stoneware pan. They actually turned out DIFFERENT. I was surprised! Part of it could also be that one was on the top rack and one on the bottom. The tops of the ones in the stoneware pan was flatter and harder, the others had a crips top with a crack. Interesting.... Maybe next time I'll have to switch them top to bottom and see if that makes a difference. Either that or I'll just bake them in two batches.
