From the The Health College Cookbook
Makes 2 servings
Ingredients
1 tbsp peanut butter
1tbsp hot water
1 tbsp cider or rice vinegar
1 tbsp low sodium soy sauce ( or 3 packets)
2 tsp sesame or canola oil
3 cups chopped broccoli
2 cloves garlic minced (or use garlic powder for taste)
1/2 of of a lb block of firm tofu cut into small cubes
Procedure
1. In a small bowl, stir together the peanut butter hot water, vinegar and soy sauce. I fit is difficult to mix, heat it in the microwave for 10 seconds.
2. warm the oil in a wok or large nonstick skillet over high heat. Add Broccoli and garlic and cook for 5 minutes, stirring constantly.
3. Add tofu, and cook for an additional 5 minutes. remove from heat.
4. Mix in the sauce until the tofu and broccoli are well coated
Chef's notes: I of course like to add sweet chili sauce. This is pretty good recip e and you can use this sauce with lot of things like chicken, beef strips or just all veggies. I liked to use it with chikin strips (the veggie kind)
