mmm... had this TWICE last week. Got this off the back of the package of my Sargento Limited edition Vermont Sharp White Cheddar Cheese. Had a 35cent off coupon which put rite below $2.00 for the package.
and this was very tastey.
Cheddar Bacon Avocado Melts
INGREDIENTS
1) 4 slices multi-grain or whole wheat bread
2) 8 slices Sargento® Deli Style Sliced Medium Cheddar Cheese (or the white Cheddar)
3) 1 ripe avocado, peeled, seeded, sliced
4) 8 slices thick sliced bacon or pepper bacon, preferably applewood smoked, halved, cooked crisp and drained
5) 2 cups packed mixed spring salad greens or arugula (I used Spinach)
6) 2 Tbsp. raspberry vinaigrette or Italian salad dressing
DIRECTIONS
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serves: 4*
1. Preheat broiler. Place bread on a cookie or baking sheet. Broil 4 inches from heat source until lightly toasted, 1 to 2 minutes.
2. Turn bread over; top with cheese. Return to broiler; broil until cheese is melted, 1 to 2 minutes.
3. Transfer bread to 4 serving plates; top with avocado and bacon. Toss greens with dressing; arrange over open-faced melts. Serve immediately.
*For 2 servings, divide all ingredients in half and use a toaster oven set to broil in place of the broiler
Chef's notes: If you're nervous about the broiler set your oven on high. about 400 degrees. The ingredients might sound strange but it's really tastey light dish. I know I'm not the most season appropiate eater since i had it w ith fruit salad but it was warm last week in South georgia for a little while at least.
Today starts Great Lent for me, guess what that means... lots more vegan recipes. Because as an Orthodox college chef i'm abstaining from all animal products. won't really miss the meat. mostly miss the cheesey good ness
