Hello everyone! I hope you're all doing well. I'm doing great today. Especially since me NCAA brackets are kicking ass & taking names. I have 15 out of 17 correct. I so rulez the game!

Yesterday was very tiring. I spent most of the day baking & cleaning. I baked a loaf of Irish soda bread for tonight's dinner, pancakes for this morning's breakfast, boiled up rice for last night's dinner and created last night's dinner.

I made a wild rice pie for dinner. It was a recipe I created. I took 2 cups of wild rice blend & cooked it with some sliced dried mushrooms then let it cool somewhat. I added some sliced & roasted Japanese eggplant that I had in the freezer (2-3 sliced in 1 inch coins then lightly roasted). I mixed all of this with 2 cups of grated cheese, 1 tablespoon of pepper, 1-2 tablespoons of Mural of Flavor (Penzey's spice blend or other spice to your liking) & a pound of raw bay scallops. Once everything is well mixed pour it into a large casserole or two large pie plates (well greased with butter). Bake in a 350 degree over for 45-50 minutes. Cool slightly and serve. It was really great.

I also made a crustless coconut pie that I planned to take over to crysthewolf's place last night but it was still to gooey as it didn't have enough time to set up. We tasted it later last night and it was good.

Tonight we're going to see the HART Production of "In a Dark, Dark, House". I can't wait. It's got a great cast and is a LaBute. That name alone makes me have to see it.

Tomorrow we are going to a 3D sneak preview of "Monsters vs Aliens" then I'm going to the Indy 1500 Gun & Knife show with friendstephen. I'm really looking forward to it. Then that evening we're getting together with some people on a local site for a meet & greet dinner. Again, should be fun.
