Science Project: Sriracha Viscosity

Alas, it's that magic time in a man's life when he exhausts one bottle of Sriracha and has to open another one. Since there was still some left in the old bottle, I decided to do the old inverted stacking thing to allow the old bottle to drain into the new one. I left it overnight. Almost twenty-four hours later, it looks like none of the sauce in the upper bottle budged. Now that's viscous!
