+ Dinner Sunday: Skillet Pastitsio from Cooking for Two 2010, peas, and
Parmesan herb bread.
- Dinner Monday: Grilled salmon, grilled corn on the cob from the farmers market, and garlic bread. Sounds good, right? This meal was a total bust. The corn was either too old (I bought it Saturday), or not sweet to begin with, or we overcooked it, or...something. The salmon wasn't getting done on the grill, so Bear put it in the oven for a few minutes, and then it was about a minute overcooked. The garlic bread was good. It was storebought. :p
+ Dinner Tuesday: Burgers and fries at Earth Fare before going to Target for a baby gate, which won't fit at the bottom of our stairs because of the stupid baseboard. And if I move it above the baseboard, it hits the banister. Sigh.
- (Oh, if you're not friends with me on Facebook, you missed that yesterday, I couldn't hear Rowan [always a bad sign], so I went to look for her, and I couldn't find her. She was upstairs! By herself! Aaah!)
+ Dinner today (Wednesday): Corn chowder and Parmesan herb bread. The corn was a heckuva lot better in chowder than it was on the cob. I pulled out the recipe I used in high school, but I tried not to make enough to feed eight. :) It's really easy: onions from the farmers market, celery, carrots, half of a red bell pepper from the farmers market, olive oil, chicken broth and water, leftover corn (we had three ears), a pound of small red potatoes, and once the potatoes were soft, I added some heavy cream. I seasoned it with salt, pepper, Old Bay, and thyme.
Dinner tomorrow: The plan is to get chicken sandwiches and milkshakes from Chic-fil-A. I know, not healthy or kind to animals, nor will it use up anything in the fridge. But it sure sounds good.
