This weekend my inner Ma Ingels came out to play. ~_^ Sunday we went to a farm stand out on the island and loaded up on fresh fruit and veggies. When we came home I made dinner with all the goodies I got from the farm. Since we got a lot of cucumbers I made cucumber salad and Kosher dill pickles. The pickles are fun and easy. They are not cooked so after they are fermented, just the way you like them, they have to be refrigerated. I changed this recipe from the original link by adding more pickling spice, no bay leaves, and I added less dill and more garlic (and I peeled my garlic ( ... )

Here is the recipe for the Peach cake. I used the below recipe but switched the peaches for the apples (you can also use blueberries). This cake/tart is not overly sweet and is great for breakfast or mid afternoon snack. Enjoy!

Apple Tart (Dutch-Apple Cake)

1 C Sifted flour
1 1/12 t Baking powder
1/2 t salt
4 T Sugar
1/3 Shortening
1 egg beaten
1/4 C milk
3 - 4 C sliced cored apples (have also used blueberries or peeled peaches)
1/2 t cinnamon
1/4 t nutmeg
2 T butter

Mix 2 T sugar with cinnamon and nutmeg, set aside.
Sift flour, baking powder, salt add 2 T sugar. Cut in shortening. Add beaten egg and milk. Thinly spread batter on a greased 10 x 6 pan. Arrange apples on top of batter in an overlapping pattern. Sprinkle top of apples with sugar and spice mixture, dot with butter. Bake at 350 for 40 min

The pickles were fun. The cake was good! It has been a long time since I made the cake and I forgot how simple and good it was.

Looks like good eating! I used to make pickles - the bread and butter kind. It is amazing how much better tasting home made are! I bet yours are crunchy, too! Yummy.

And fresh peach cake - terrific!

Sunday was a pretty day for a ride and shopping. Good thing cause this week is a wash-out with all this rain.

My mom always made bread and butter pickles.

I made kosher dill but I still haven't got it right . Last time it was too much dill this time they have too much garlic.

Sunday was gorgeous and it was a nice trip.

We woke up at 7:30 on a sunday and drove 54 miles to the farm. Believe me it wasn't easy, but it was fun and the veggies were great.

Oh.... do it! You should have a plan first but be flexible. I planned on getting lots of peaches and either freezing or canning them. Once I got to the farm they didn't have peaches by the bushel but they had a ton of other fresh veggies. So we just bought a little of this and a little of that and we had fresh salads and veggies all week. Yum!

I'm bookmarking this post for these recipes. I've never made my own pickles. I now want to try :)

And heh, for some reason, I have problem doing the barefoot walk through security. I should, but I don't. In fact, I usually wear flip flops on purpose simply due to their ease of removal :)

I like to wear sandals to the airport too, but right before I go through security I put on sox, then I take them off right after I finish with security. I look a little dorky with my sox and sandals, as I go through security but I don't care. :P
