I discovered recently that I could make a really easy dinner by cutting up some eggplant into rounds and layering it with spaghetti sauce, mozzarella, and some panko and mozzarella on the top layer, and sticking the whole thing into the oven for about forty minutes. This gave me a sense of accomplishment rather out of proportion to the actual effort I put in--but maybe that was why it was so satisfying.
And yesterday I tried out a soup recipe that I saw the day before on Everyday Food (thanks, PBS!). It was supposed to be a corn and potato chowder with edamame, but my grocery store didn't have edamame, so I added an extra can of regular corn to the already specified can of creamed corn--which worked pretty well, as it made the resultant soup nice and sweet. The nice thing about the recipe is that pretty much everything except the onion and red potato came in a can/carton (chicken broth, half and half, corn) or bottle (dried thyme and basil--I was supposed to use Italian seasoning, I think, but mine looked pretty dismal, and I'm not all that sure I really wanted rosemary in my soup anyhow), so it was very easy to put together. And now I have lunch for the rest of the week.
Of course, I fell asleep pretty much every time I tried to read something this weekend, so it's worth putting my chowder success into perspective...
