You take the lower base of the third stem, and peel it back cross-hatch style with your pruning knife--be careful not to nick the petiole, or it'll try and stab you with those fangs.

Don't you know? Ministry's gotten a little tired of me always hanging about. They've sent me down to lecture the Care of Magical Creatures class. Can you imagine? Calling me a creature?
