So happiness and stability

Hey All,

OK, so its time to post some more happy stuff. A lot has happened in last lil' bit. We had a rockstar intervention last night, that was good. Its terrifying to realize just how amazing you are....I spend so much time feeling misunderstood, when I don't even understand myself....but that's water under the bridge, let's talk about happier things.

We got officially engaged last weekend.....yeah, I actually think I'm ready to enter into a lifelong commitment....scary stuff, I know! We're planning on a flight to Omaha, then a quick jump over the border to Council Bluffs, IA. Iowa holds a special place in our hearts due to the irony of getting married in the bible belt.

At any rate, I'm feeling happy and good.... so that means I'm going to talk about 1 or 2 things, either food or money. Today its food! Found an awesome recipe for Shrimp chow mein. Except I'm gonna bugger it all up and turn it into lo mein with E-Fu noodles and lots of veggies. Cut up a bunch of celery, part of an onion, 2 heads of broccoli, and shredded about a pound of carrots. The E-fu noodles are tons of fun, and I love their consistency....I prefer them steamed as opposed to boiled as they remain super chewy and the wheat flavor stays intact.

Then came a big pot of chili. Anyone up for dinner tomorrow? I'm also going to make cornbread with the smoked Hatch chilis my dear friend Melissa gave to me a couple of years back (thank god they freeze like a champ), corn, and lots of cheddar! So my chili is pretty basic....1 cup pinto beans, 1 cup black beans, 4 cups water, about 1.5 lbs of my Kellog Orange tomatoes from this summer (still have 2 on the shelf I'm hoping will ripen), an onion obliterated in the food processor with half a container of chipotles in adobo, tons of oregano, a healthy dose of garlic, and a good sprinkling of cumin. It smells great and I'm sure the husbear will be cursing my name at 5am when it starts to smell really good :) I'll fry up and add a pound of super lean ground beef I scored at NPS for cheaps. I think the most expensive part of this meal will actually be the flour...LOL! The temptation is to throw in some bacon, also scored at NPS, but I'll see where this comes up...I think it may be overkill.

I'm also getting a pineapple ham ready for Wednesday. Its a simple crock pot affair, a ham (or in this case pork loin freezer/vaccuum marinated with liquid smoke and sugar because I didn't have the ham in the freezer that I thought I did) cooked in pineapple juice with a few cherries skewered in. Of course the leftover pineapple juice will get turned into gravy and served with mashed taters.

Menu planning has been a godsend! I can work myself to the bone during the week and come home and viola, something is in the fridge/freezer and ready to go. I'm planning on using this trick when the whole famdamily is here for the holidays as well. I'm excited, but scared to death....I don't know how to entertain young girls, let alone feed a whole army. I'm sure it'll be fun....I just want my neices to have the best Christmas ever!

I'm happy, I'm feeling good, I'm getting my bearings....its just been a unique challenge, a new challenge.
