This isn't quite the one from the Duck, so I'm posting what I do nowadays.
~l lb fresh broccoli, chopped up (include the stems, they're the sweetest part)
1 head fresh cauliflower, chopped up
1 large onion, chopped up
~4C chicken stock*
~1/2 gal water (or to make sure the veggies are all covered, however much that takes.
1-2 cloves garlic
2 TBSP Fox Point seasoning** (Penzey's) or seasonings to taste.
Salt/pepper to taste
~1-2 cups milk
1/2 lb Diamond Marble or Velveeta cheese, cubed or shredded***
Bring all ingredients except milk and cheese to a boil. Boil until veggies are tender, reduce to a simmer and add milk. While simmering, add cheese and stir until cheese melts. Put everything through a blender (reserve some pieces of broccoli and cauliflower if you want chunks in it). Add salt/pepper/more Fox Point if desired.
* If you want it to be vegetarian, you'd want to use vegetable stock instead.
** Fox point consists of salt, shallots, chives, garlic, onion and green peppercorns, dried and powdered. It's very good on veggies.
*** Or whatever kind you like. I tend to stick with milder cheeses, but shredded cheddar or parmesan would give a bolder cheese flavor. (With regular cheeses, shredded works best. With Velveeta, it'll melt pretty well from chunks.)
