Mom got this recipe off the back of a "bran flake cereal" box a whole lot of years ago and it's become my preferred birthday cake every year. Mom made my cake late this year and we had it yesterday. Yum!!
Choc-O-Dot Pumpkin Cake
2 c. sifted flour
2 t baking powder
1 t baking soda
½ t salt
1 ½ t cinnamon
½ t ground cloves
¼ t powdered allspice
¼ t ginger
2 c sugar
4 eggs
2 c canned pumpkin
1 c vegetable oil
1 ½ c Bran Flakes Cereal
1 c semi-sweet chocolate chips
1 c chopped English walnuts
Sift dry ingredients. Set aside. In large bowl beat eggs until foamy. Add pumpkin, vegetable oil, and Bran Flakes. Mix well. Add sifted dry ingredients, mixing only until combined. Stir in chocolate chips and walnuts. Spread evenly into ungreased 10x4” tube pan.
Bake at 350 about 70 min. Cool completely before removing from pan. Dust with powdered sugar before serving.
