I found a few recipes, mixed and matched to make what *I* wanted...this one, I used in a wrap but it'd do nicely on a bed of lettuce, too.
2 boneless, skinless chicken breasts
2-3 stalks celery, chopped
1/2 C mayonnaise (or similar dressing)
2T lemon juice
1 pint strawberries, hulled and chopped
1/2 C toasted slivered almonds
salt/pepper to taste
Flour tortillas
Cube chicken, salt/pepper it, and cook covered until done. Cool. Add all ingredients except tortillas. Chill. To serve, spoon into a tortilla and wrap like a burrito.
