1. Just because curry and garam masala are both used in Indian food does NOT mean you can substitute one for the other. FOOD: It turns out that tripe has to be boiled for 2-3 hours prior to cooking, and I didn't get to the store until 4:30PM. So we'll eat it for dinner tomorrow.
