Method:
- Put the turkey mince in a bowl. Add the garlic, chilli, salt, pepper and a 1 tsp of oil (and chilli powder if using) to the turkey mince. Mix everything well and leave it aside while u chop up the other veg and prepare for the cooking ahead.
- Add a bit of oil to a hot pan. Throw in the onions and fry for about 3 min.
- Add the mince and fry that off (about 3 min).
- Now add the carrot, celery, assorted peppers and courgette to the pan and fry away for 5-10 min.
- Add the tomatoes, passata, wine and leave it to cook for a min of 30 min.
- Season with salt and pepper.

Note:
If you’re not using wine, you can add stock, more passata or tinned tomatoes instead.
If you find the sauce is a bit to tart (a problem I sometimes have when I’m using tomatoes), add ½ tsp of sugar to the sauce.
