A couple of Sundays ago Martin's dad, stepmom and brother came over for dinner and i decided to make a mixed grill, since it was so sunny and all. We had marinated chicken cubes, red pepper, tomato and onion; all skewered and grilled. Some homemade sausages that were skewered as well...... grilled mozzarella wrapped in bacon and craddled in bread (so that when the mozzarella melts all the juices and cheese will get sucked up by the bread)... and some pasta with chargrilled aubergine pesto to go with it all. Sadly, i was so busy getting the food ready that i forgot to take pictures! its alright... i'll prolly make it again soon!
Anyhooo.... i had half a bag of fresh tagliatelle, lots of sausage meat, tomato and red pepper left over. So i decided to make some left-over pasta!

3-5 Tomatoes, halved
2 large red pepper, chopped
3 cloves garlic, crushed
4 tbs Olive oil (or any oil that you want to use)
salt and pepper
mixed herbs (just any that u have lying around the house. i'd say thyme and rosemary :) only coz thats what i feel like right now.)
Coat the tomatoes, peppers and garlic in olive oil and mixed herbs. Make sure to season. Put everything in a roasting tray and leave it in the oven until the peppers start to burn slightly. You might have to give the tray a good shake 1/2 way.
Once its all cooked, put everything in a blender/food processor and blitz away. drizzle in some olive oil while blending and only stop when its reached a pesto-like consistancy.
That's it! Throw in some cooked pasta, cooked meatballs/sausage slices/chicken cubes and toss well. Grate some cheese over the top and there you go! :) leftover pasta complete! Yummy!
